A 4-course feast serving up dishes made using pine, spruce, fir and their evergreen friends to encourage mindfulness around food waste in a time of climate crisis.

White pine, olive oil and sesame amuse bouche

Spruce cured salmon and fir cured halibut with creme fraiche OR Christmas tree and beetroot cured egg OR Chicken, gin and juniper pate OR Sour plum pickle, Christmas tree pickled bamboo shoot and bean slaw (vegan)

(All served with Christmas tree pickle ribbons and homemade rye bread and a silver pine kombucha shot)

Juniper-gin lamb with thyme and alcoholic apricots OR Retsina squash with preserved lemons, sultanas and rosemary (vegan) OR Pine, pistachio and sourdough stuffed mushrooms OR White pine smoked fish (fishmonger's choice) with cabbage and capers

(All served with pine couscous and pine-ash burnt-cauliflower and a shot of fermented juniper berries)

Blue spruce and ginger ice cream with salted pine nut brittle OR Molten chocolate and pine nut brownie OR Bamboo and coconut ice cream with candied bamboo OR Plum and juniper crumble (vegan)
